Matcha is a tea made by steaming and drying tencha, then removing the excess. Tencha differs from regular green tea (sencha) in that it is grown in a way that prevents the tea leaves from being exposed to strong sunlight by covering the tea field with a ledge. This is because when grown in this way, the tea leaves develop into tender shoots with more flavor than normal tea leaves grown in the sun. Tencha, which is grown in this way, is ground into a powder using a stone mortar, and is called matcha, which requires a lot of time and effort in the manufacturing process.
Matcha is generally used in tea ceremonies, but in recent years it has been used to make matcha cakes, matcha ice cream, matcha chocolate, and other sweets and dishes. Matcha is also rich in nutrients such as catechins, saponins, and vitamins, and has long been popular for its health benefits.
